Healthy Oat-Free Granola

Ingredients:
1/2 cup unsweetened shredded coconut
1 cup raw almonds, slivered or sliced
1 cup raw walnuts or cashews
1 cup raw pecans
1/2 cup raw pumpkin seeds
1/4 cup hemp seeds
1 cup cacao nibs
1 tsp ground cinnamon or pumpkin pie spice
1/4 tsp sea salt
1/4 cup melted coconut oil
2 tbsp maple flavored monk fruit sweetener
Instructions:
Preheat the oven to 375 degrees F.
In a large bowl, mix together all the ingredients except the coconut oil and monk fruit sweetener.
In a large saucepan over medium-low heat, warm and stir the coconut oil and monk fruit sweetener. Add the other ingredients and mix well.
Line a rimmed baking sheet with parchment paper and spread the mixture onto it. Bake for 20 minutes. Remove and toss around with a spatula. Bake for another 5 minutes, or until golden brown.
