2 heaping cups shredded chicken breast
4 tablespoons avocado mayonnaise
1 tablespoon curry powder
1/4 cup finely diced apples
1/4 cup slivered almonds
1 tablespoon chopped fresh cilantro (optional)
In a small bowl, stir together mayo and curry powder.
Place remaining ingredients in a large bowl. Add curry mayo mixture and stir well to combine. Add salt and pepper to taste if desired.
