Cauliflower-Sweet Potato Mash


1 pound sweet potatoes, peeled and chopped

3 cups cauliflower florets

2 cloves garlic, peeled

3 tbsp ghee or clarified butter

1/2 tsp salt

1/4 tsp black pepper


  1. Place the sweet potatoes, cauliflower, and garlic in a large saucepan, add enough water to cover, and bring to a boil. Reduce the heat, cover, and simmer until the vegetables are tender, 12 to 15 minutes. Drain

  2. Using a potato masher, mash the vegetables until desire consistency. Stir in the butter, salt, and pepper and serve.

Serves 4.
