Apple & Shaved Brussels Sprouts Salad with Creamy Balsamic

Ingredients:

1 pound brussels sprouts, stems removed (or buy 1 lb. pre-shredded brussels)

2 medium red apples, diced (300 grams)

1/2 cup almonds, cut in half/sliced

Optional toppings: sesame seeds


Creamy Balsamic:

1 1/2 tablespoons tahini

1 1/2 tablespoons balsamic vinegar

2 teaspoons lemon juice

1/2 teaspoon ground ginger

1/2 teaspoon cinnamon

Pinch red pepper flakes

Salt, to taste

2 tablespoons water (depending on consistency desired)

Instructions:

  1. Toast the almonds. In a nonstick sauté pan over medium-low heat, add almonds and toast for 2-3 minutes until golden brown and fragrant. Make sure to stir so they do not burn. Remove from pan and set aside.

  2. Make the dressing. Add all ingredients to a small bowl or jar and mix until combined. Add more water if you would like a thinner consistency. Set aside.

  3. Shred the brussels sprouts. Run through your food processor with the larger shredding attachment. Add to a large bowl with the apples and almonds. Mix in dressing and stir to combine. Top with sesame seeds if using and enjoy!
